Winemaker’s Notes
The Crater Rim Canterbury Pinot Noir fruit was sourced from a number of local vineyards scattered throughout the Canterbury region. These local vineyards contain a wide variety of soil types and microclimates, which produce fruit with distinct characters. These parcels of fruit are blended together creating a pinot noir that captures the diversity of the Canterbury region. The fruit was fermented in small open top vats using natural yeasts, followed by 10 months maturation on lees in seasoned French oak barriques.
Red berry fruits, smoke, and violet aromas are underpinned by a fine tannin structure. A true expression of Canterbury Pinot Noir
